AOCs

Cefalicchio's vineyards fall within three different Puglia DOC zones: Castel del Monte DOC, Rosso Canosa DOC and Moscato di Trani DOC. The first two largely feature the Nero di Troia grape variety, while the third - as the name implies - is based on the Moscato bianco, a variety traditionally found in the area north of Bari, and on the sweet or liqueur-like wines derived from it.

Cefalicchio signed the Guideline proposed by the "Vini Veri / True Wines" Group (www.viniveri.net). The Guideline simply "defines the actions (or non-actions) that allow for wine to fully express itself. Wine should be a product of nature and not external influences intended to speed up or stabilize the winemaking process. We work to restore the harmonious balance between man and the land." This approach encourages wine growers to improve their working methods and informs customers of the effects of these practices as regards the expression of the terroir through its wines.

The Guideline's intention is to put in contact all those who share the same wine philosophy, be they producers, distributors or consumer, restore the full meaning of the terroirs and release these wines from the competition that technology, and the lack of typicality caused by its excessive use, have triggered in the world wine market.
